What I Eat in a Day-Vegan

Hey guys! I love sharing what I eat because I think it can be really helpful for new vegans, as well as folks simply looking to be healthier. Before I start my morning workout, I love to wake up with some hot tea. Green tea is so ridiculously good for you, and I love this one that my family buys in bulk! Organic pack of like 1,000. Insane. 


For my breakfast after my AM workout, I whipped up a tofu scramble and mixed it with some rice! I had a nice cup of coffee on the side. Also, I don’t drink coffee every single day! I just love the way that it tastes, weird I know. A little while later, I had a banana nut muffin! My mom made a huge batch, and oh m gosh I wish you guys could all try a bite. So good!


This is just a salad that I had for lunch after my afternoon workout! I like to do a couple of super high intensity workouts, rather than an hour with rest. It keeps my attention, and I feel like it just works best for me!


 After my salad, I ate this entire cookie🙈 I am literally obsessed with Lenny&Larry’s. I have been eating these cookies for like a year now, and they’re so filling and totally cure a sweet tooth. Obviously, I don’t eat one every day, but every now and again as a treat… Oh heck yeah!

For my dinner I had more rice, gallo pinto, and more salad with green beans! If you don’t know what gallo pinto is, it’s the staple dish of Nicaragua! My sister in law is Nicaraguan, and my mom has made it her mission to learn how to cook gallo pinto. We facetimed right after dinner, and we showed the gallo pinto to my cuñada… She approved!
