What I Eat in a Day: Healthy & Vegan

Hey guys! So I absolutely love reading what other people eat in a day, and hopefully you do too! I want to start posting one at least once a week, and let me know if you would watch a video version🙈 Alright, let’s get started.


I woke up, and I immediately wanted something sweet. I think it’s important to listen to what your body is craving, so I made an English muffin with pb, banana, and cacao. So tasty! 


I honestly think that lunch is my favorite meal of the day. This amazing sandwich on rye bread was 👌🏼. I used vegan mayo, mustard, mixed greens, cucumber, tomatoes, more cucumber, onion, salt, and pepper! OMG! This is my new favorite thing. I love eating veggies so much. I’m a texture person so crunching makes me happy. 


My mom’s meals always put mine to shame😜 This amazing plate is full of rice with veggies topped with more veggies. Oh yeah. I recently discovered that I love brussel sprouts. A lot.
